Pistachio cracks open first, green, roasted, faintly sugared, right as a swirl of soft-serve ice cream folds around it, bergamot cutting through the sweetness like a spoon through the top of the scoop.

That opening scoop softens into a bouquet you don't expect from a dessert: lily of the valley, jasmine, and peony unfurl alongside juicy pear, white peach, and raspberry, with geranium keeping the florals from turning too candied. As it settles, the base turns into pure indulgence, whipped cream, marshmallow, and spun cotton candy melt into warm tonka bean and loukhoum, grounded by sandalwood, cedar, and a final trace of cacao so it never floats away sugary, it lingers, rich and warm.
